Hi i am new to this but have done many pc builds.
What do i need to build a pi nas as easy as possible and is it achievable from a beginner.

A Pi, something to boot it from, some HDDs/SSDs, some way to connect them to the Pi (USB 3 is easiest but SATA over PCIe should be possible) and power them (3.5" drives cannot be powered from USB alone).
I have a nas from synology but with only 256 or 512 meg ram soldered... so not upgradable... and 2 x 16tb drives while it works its not properly as too many movies for it to sort even when divided into many subgroups.
Ideally i dont want to spend thousands as this was synology solution

A lot will depend on how the drives have been partitioned and formatted and whether that is done in a standard way or with proprietary methods.

For 16TB ext4 partitions you will need to use a 64bit OS but you should be doing that on a PI5 anyway.
