My personal opinion is teaching anyone to use Microsoft Office is less than ideal from financial and freedom points of view. School should be about doing things better than what's common.I would be running a server (64c + 128GB RAM) which would host ubuntu desktop, server and a Windows server(to provide MS Office) using Proxmox.
On the other hand, the decision makers at large companies and institutions likely have purchased large licensing packages and want everyone to benefit from their wisdom.
Thus, one is caught between the practicalities of sticking with current methods and the educational mission to do something better. Said another way, there is no point in going to an agriculture school if they teach the exact same farming methods already in widespread use.
