I have an older type Victron invertor, it came with a system someone created for holidays with a motorhome/camper. If you have devices that absolutely need AC sine wave like a fridge or so, then use an inverter. Otherwise don't even think about such a solution. You can go directly from 12V to 5V with a small and efficient DC-DC module, you waste less energy in otherwise several conversion steps.How about buying a small 12 volt inverter the produces a pure sine wave and just use the original
Raspberry Pi 5 power supply.
Car battery will not last long no matter what you use with a raspberry Pi5. You could end up walking home.
Others mentioned a Pi4, that is what I would use, the Pi 5 makes a nice backup for home computer,
many many projects it will be much fater at compared to Pi4.
