If it helps anyone else, here is how I have managed to get things to work....eventually. (Never give up)
Disabling all the audio devices in config.txt and adding the dtoverlay=rpi-dacplus as per the recommended instructions was the correct way to go to ensure that it was the default device (worked with V1 Fruitbox) BUT it resulted in raspi-config showing no audio devices and I am guessing that is why Fruitbox wouldn't load.
I could get speaker-test to work so I was sure it had to be a setting somewhere.
aplay -l showed the rpi-dacplus as the default soundcard but Fruitbox was still not interested in loading.
After trying all manner of settings in all sorts of .config files, I had a break through.
I installed pulseaudio and rebooted, then going into raspi-config - system options - audio, the pi-daq-plus is now listed as an audio device and Fruitbox now boots and I have tunes.
I really hope that helps other people who have the same problem.
