You could use a pico controller with a display add on board

With a pico-2-W, you have wireless connection in your local WiFi net.
Use a RPi 3,4,5 as a controller which distributes the data. I would use MQTT to provide the data.

Not a low budget solution. You need an enclosure (3d printed?), pico-2-w of course, power supply (multiple?). The advantage of this solution is its modularity. You easily start with one and extend it to almost any number you need. And you have no problems when distance from controller to display unit is in the range of meters.
