If you really don't want to use Imager, and have a Linux system already running, you could have a look at sdm.
sdm enables you to fully configure WiFi (and pretty much everything else) quite easily. For WiFi, you can have sdm insert an already-configured nmconnection file, or you can simply provide the WiFi SSID/password and it will generate one for you.
After you've run the customization and it's to your liking, you would use sdm to burn the disk for a specific host, with any host-specific customizations, such as the hostname, etc.
