Did you resolve this? I have the same issues on a Pi B with: Linux raspberrypi 6.12.62+rpt-rpi-v8 #1 SMP PREEMPT Debian 1:6.12.62-1+rpt1 (2025-12-18) aarch64 GNU/Linux
It works:

But the second you try configuring security it stops:

I was stupid enough to try to make config changes, without copying the SD card prior to installing PiHole so I have now reinstalled and see the same issues on a fresh install.
FWIW the imager 2.0.3 never worked for me, always stopped on 61% so I extracted the image from the archive and used Win32Image to write it
It works:
