that's a cool project! have you tried running Viking (https://sourceforge.net/projects/viking/) on a Zero 2W? this is by far the best GPS application i ever found on the penguin land, really neat!
what are your thoughts on UX? i would bet physical buttons are better than touch-screens for this scenario... if you opt for Viking, having a simple way of moving the mouse is required and you can try those little trackballs (for Blackberries) modules or maybe even a (low-profile) analog joystick (ones made for the PSP/PSvita still sell on Aliexpress). or even mouse emulation via buttons. it wont be water-proof but at least you can isolate the buttons area of the case with a wall (assuming your 3D printing stuff) and seal the cables passing to the inner part (where the Pi and sensor will be) with silicone or hot-glue... maybe there are tiny waterproof buttons out there?
