Zero 2 boots from USB. Did it the other day. Older Zero and Zero W did not. Some USB 3 USB devices have lousy chips inside as USB 3 was a sloppy standard. The USB 3.1 standard corrects the errors. Look for USB 3.1 enclosures. If not 3.1, find out the USB chip ID before buying.
but the zero2 only does usb2, so a usb3 adapter is a waste of money

but good luck finding a usb2 only adapter for nvme

A USB3 one should also work via USB2. My Realtek Semiconductor Corp. RTL9210 based one does.

But NVMe is a complete waste of money over USB2 regardless of the USB host hardware. Max bandwidth of 480Mbps which is approximately 1/40 or less of the PCIe bandwidth NVMe drives are designed for.

If you already have a spare NVMe drive and USB adapter/enclosure go ahead and try it. If you have to buy them, don't bother.
